Fried Rice Using Leftovers

What you need:
  • Leftover brown or white rice (3/4 - 1 cup)
  • Fresh or frozen vegetables (1/2 - 3/4 cup)
  • Olive oil (1-2 tbsp)
  • Soy sauce (1-2 tbsp)
You can increase or decrease ingredient amounts based on your personal preference. I like mine to be about half vegetables and with a generous amount of soy sauce. You can also add leftover meats but I prefer to keep mine vegetarian. I used a frozen pea and carrot mix and fresh onion.

How to make this:
  1. Heat oil in a small skillet on medium heat.
  2. Add vegetables and cook until the vegetables are softened but not fully cooked. You can add a small amount of salt to your vegetables if desired.
  3. Add rice and continue cooking until rice is reheated.
  4. Add soy sauce or any other sauces you may like and cook until the vegetables are fully cooked.
