What you need:
- Leftover brown or white rice (3/4 - 1 cup)
- Fresh or frozen vegetables (1/2 - 3/4 cup)
- Olive oil (1-2 tbsp)
- Soy sauce (1-2 tbsp)
You can increase or decrease ingredient amounts based on your personal preference. I like mine to be about half vegetables and with a generous amount of soy sauce. You can also add leftover meats but I prefer to keep mine vegetarian. I used a frozen pea and carrot mix and fresh onion.
How to make this:
- Heat oil in a small skillet on medium heat.
- Add vegetables and cook until the vegetables are softened but not fully cooked. You can add a small amount of salt to your vegetables if desired.
- Add rice and continue cooking until rice is reheated.
- Add soy sauce or any other sauces you may like and cook until the vegetables are fully cooked.
